Lark Classic Cask Strength Single Malt Whisky

In 1992 the Lark household became the first Australian distillery to produce single malt spirit in 154 years. The spirit continued to grow and evolve, leading to the creation of a rich Tasmanian Single Malt Whisky aged in small casks. Finally in 1998, after years in the making, from Bill and Lyn’s kitchen table to Davey Street Bond Store, the first Lark Distillery Single Malt Whisky was released commercially.
The Lark Distillery has seen substantial growth over the years, but the commitment to producing a quality Tasmanian Single Malt has stayed the same. Now situated in the heart of the famous Coal River Valley, the Lark site has grown to accommodate a 1800L Wash Still and a 500L Spirit Still, both running 7 days a week.

A wild and distinctive reflection of the Tasmanian landscape and the pioneering spirit of Lark’s makers. Cask Strength 58% is shaped and carved by old-style Lark, featuring big flavours of dried fruit and butterscotch, a huge port cask influence, and hints of maple syrup with sweet notes of Tasmanian highland peat.
Handcrafted at Lark's Coal Valley Distillery, Cask Strength 58% takes Lark’s signature Classic Cask single malt to bold new depths. Referred to by whisky connoisseurs as 'liquid gold', it earned silver in the 2019 + 2018 International Wine & Spirit Competition and Bronze in the 2016 Australian Distilled Spirits Awards.

Nose:    Cinnamon, nutmeg, liquorice and orange peel with vanilla, butterscotch and oaky aromas.

Taste:    Intense vanilla and Christmas cake sweetness. Citrus and butterscotch flavours with stewed fruits, maple syrup and a hint of Tasmanian peat smoke. Complex citrus and spices give way to oak and stewed fruits.

Finish:    Citrus, spices and toffee notes develop into a warming finish that stays long after the last sip.
