Lark Christmas Cask 2025 Release Limited Edition

Lark Christmas Cask 2025 Tasmanian Single Malt Whisky from, a festive Limited Edition that captures the spirit of togetherness, tradition, and the magic of Christmas in every sip. The whisky was aged in a selection of first-fill Port and Sherry casks, then finished in Frogmore Creek’s red wine barrels seasoned with Jean Pascal Bakery’s Fruit Mince Pie jus.

    Nose:    Warm aromas of freshly baked rhubarb pie and rich Christmas pudding, laced with brandy butter. Mulled wine spices rise gently, with a delicate waft of cranberry shortbread crumble.

    Taste:    Luscious arrival of caramel and creamy coconut, balanced by the gentle spice of gingerbread and the soft, nutty sweetness of marzipan.

    Finish:    Long and warming, with layers of fruit mince pie and sticky cinnamon buns. Frosted orange cupcakes and a moreish note of peanut brittle.

In 1992 the Lark household became the first Australian distillery to produce single malt spirit in 154 years. The spirit continued to grow and evolve, leading to the creation of a rich Tasmanian Single Malt Whisky aged in small casks. Finally in 1998, after years in the making, from Bill and Lyn’s kitchen table to Davey Street Bond Store, the first Lark Distillery Single Malt Whisky was released commercially.
The Lark Distillery has seen substantial growth over the years, but the commitment to producing a quality Tasmanian Single Malt has stayed the same. Now situated in the heart of the famous Coal River Valley, the Lark site has grown to accommodate a 1800L Wash Still and a 500L Spirit Still, both running 7 days a week.
