Lark Rum Cask Release III Single Malt Whisky

In 1992 the Lark household became the first Australian distillery to produce single malt spirit in 154 years. The spirit continued to grow and evolve, leading to the creation of a rich Tasmanian Single Malt Whisky aged in small casks. Finally in 1998, after years in the making, from Bill and Lyn’s kitchen table to Davey Street Bond Store, the first Lark Distillery Single Malt Whisky was released commercially.
The Lark Distillery has seen substantial growth over the years, but the commitment to producing a quality Tasmanian Single Malt has stayed the same. Now situated in the heart of the famous Coal River Valley, the Lark site has grown to accommodate a 1800L Wash Still and a 500L Spirit Still, both running 7 days a week.

Lark’s third Rum Cask release sees the triumphant return of a now classic Lark finish–a spectacular joining of Single Malt Whisky and their very own unique Tasmanian rum.
The creation of Lark’s own Quiet Cannon Rum leaves us with a treasure trove of sweet, decadent rum casks–the perfect canvas for this single malt. They hand-selected ten richly fortified first and second-fill sherry casks from their Bothwell Distillery, then finished them in their own ex-Quiet Canon Rum casks.
The result is a wonderfully lifted and treacly single malt with notes of dark toffee, nutty oak and candied citrus, invoking romantic musings of the Wild West.

    Nose:    Fruity with aromas of fresh apples, pears, treacle tart, slightly floral honey, funky molasses and sweet vanilla oak.

    Taste:    Opulent flavours of nut-studded toffee, nougat, dark chocolate, candied orange rind, malt biscuits and a little stem ginger.

    Finish:    Very long, subtle woodsmoke, dried fruits, more molasses and treacle, slight bananas and overripe pineapple.
